Braised Pistachio Beef

Braised Pistachio Beef:
- in a deep pot, heat olive oil and cook ~1/4 cup pancetta (or bacon)
- add sliced onion and garlic
- when slightly browned, add a splash of red wine and water
- sprinkle each slice of thinly sliced beef with:
-- salt*
-- pepper
-- herbs
-- granella di pistacchio (fairly finely chopped pistachios)
- roll each slice, and place in the pot
- add red wine (Nero d'Avola) and water to half-cover
- cook on low heat for 3 hrs, adding liquid as needed

*caution! All of the Italian seasoning mixtures I have seen so far have salt as a major (if not first!) ingredient.
